It is another interesting question to be answered.

Why God created Adam and Eve if he knew they are going to sin and they will be punished to suffer and be mortal.

This is actually the mystery of creating man.
When God created angels in his form and power giving them all the super power to be able to do like him and live like him immortally, some of them grew in pride and stopped respecting God under the leadership of their leader whim god appointed to be his representative, Lucifer, with supernatural powers.

And he sinned, raised against God and since was immortal a power that god promised not to be withholding from them, created his own empire never to respect him! And sure, he also decided that he will misguide any creation God formed later on by disguising them.

But God is God, who knew the heart and minds of every creation he formed. He created man and woman with the feeble minds so that they sin and repent (A quality the Satan and his army vowed never to practice) and come back to God as humble servants of him and be always depedent on him for his mercy and grace and then praise and worship him in his saving salvation.

That is why God loves the sinners when they repent than the holy people who never have the need to repent. That is the reason God sent his only son to suffer and die for the sins of his children so that they repent their sins and come back to him for eternal happiness after their death.

The scientists have proposed a theory that the age of the Earth and this universe is billions of years and it is rightly so to remind us what eternity means compared to our earthly life, which requires us to be faithful to him for less than a hundred years compared to the billion of years. 

But the only mistake the scientists have made not to mention the Earth and the universe were not there since billions of years but have been created when he made man and will last for billions of years and our new lives in the Lord for eternity to proclaim his glory and the insignificance of human beings while on earth so that they would never be unfaithful to the Lord, their creator like the fallen angels!
