Why were Adam and Eve ashamed of their nakedness?

Also why did they only realise they were naked after they ate the forbidden fruit? What does the nakedness represent?

Genesis 3:10

ESV - 10 And he said, "I heard the sound of you in the garden, and I was afraid, because I was naked, and I hid myself.

Perhaps it was because Adam and Eve, in addition to being conscious of their disobedience to God's command (that is, of being "spiritually naked" before Him), had also become aware (now that they had fallen into sin) of the potential of their physical nakedness as a source of sinful thoughts (viewing each other primarily as a selfish source of sexual gratification (Matthew 5:27-30)), which represented a change from their pre-fallen state (Genesis 2:25), and which was why they made fig-leaf coverings for themselves (Genesis 3:7), even before they tried to hide from God.
