What is the significance of the sparrows?

ESV - 1 Inasmuch as many have undertaken to compile a narrative of the things that have been accomplished among us. 2 Just as those who from the beginning were eyewitnesses and ministers of the word have delivered them to us.

In Luke 12:6, and Matthew 10:29 as Matthew makes the same point, God's consideration for how He values mankind and especially for His children is said to be so much greater than we can imagine. God even knows when Sparrows fall to the ground and they are valued so little by a man they are sold in multiple amounts for so little. Jesus is admonishing His disciples to not fear any man, Pharisee, or anyone earthly but have awe for God who judges the Soul also and has the power to send to hell. God even knows how many hairs are on our heads and we are worth more than not 2 or 5 sparrows but many.
