How can we know that the Old Testament stories happened as they are portrayed in the Bible?

Who was present to record the events of the Old Testament?  Some theologians claim the Pentateuch was written in the 7th or 6th centuries B.C., by different authors long after Moses' death, how can one be content that what is read is accurate and inspired, or, for that matter, true?  Are early stories allegories or parables used as a method to teach, similar to the teaching method of Jesus?
