Jesus said, "I thirst" to fulfil the Old Testament prophecy.
Ps 68:21 is fulfilled in John (Jn. 19:28)

Everything that happened on that day was a fulfilment of prophesy, and a perceptive Jew who knew their Scriptures should have known what was taking place. Luke 24:26-27
It all demonstrated that everything had been planned centuries earlier (since Genesis, in fact) and God was in control throughout. Isaiah 14:24, 1 Peter 1:20

When Jesus says "I thirst" he is remembering and taking strength from the Psalms.
Psalm 69:19-21
You know how I am scorned, disgraced and shamed;
all my enemies are before you.
Scorn has broken my heart
and has left me helpless;
I looked for sympathy, but there was none,
for comforters, but I found none.
They put gall in my food and gave me vinegar for my thirst.
Psalm 22:
I am poured out like water, and all my bones are out of joint.
My heart has turned to wax; it has melted within me.
My mouth is dried up like a potsherd, and my tongue sticks to the roof of my mouth;
you lay me in the dust of death.
Dogs surround me, a pack of villains encircles me;
they pierce my hands and my feet.
All my bones are on display; people stare and gloat over me.
They divide my clothes among them
and cast lots for my garment.
But you, LORD, do not be far from me.
You are my strength; come quickly to help me.
