I mostly like Michael's references regarding God's face, eyes, hands, and hearing. I would just add this:

Eyes, though symbolizing in some places in the Bible, Spiritual Discernment	Matthew 13:10-17, 1 John 2:11; Prov. 20:8; Eph. 1:18, 

When referring to God, God’s eyes, they are a symbol of His awareness Pr 15:3; 1 Pe 3:12.

Hand/Hand can be a Symbol of Deeds / Works / Actions	Ecclesiastes 9:10, Isaiah 59:6 but referring to God would be a symbol of his Power Ps 21:8; Psalm 89:13.

So, in summarizing anthropomorphic symbols relating to God, Symbols are expressing God’s nature and character are:

God’s face: a symbol of his presence Nu 6:25-26; Ps 34:16

God’s arm or hand: a symbol of his Power Ps 21:8; Psalm 89:13

God’s eyes: a symbol of his awareness Pr 15:3; 1 Pe 3:12

God’s ear: a symbol of God listening Ps 31:2; Isa 59:1
