I think that blessing of the elements is an important part of communion, so that all who plan to commune are made specifically aware before partaking as to the significance of the elements as the body and blood of Christ, and the consequent necessity to treat the elements and the sacrament with the same respect that would be due to Christ Himself. 

It is also equally important that people who do not recognize the presence of Christ in the elements, and the consecrated nature of the elements, be made aware of their significance, so that they may avoid eating or drinking judgment upon themselves by partaking of the sacrament in an unbelieving or unworthy manner (1 Corinthians 11:20-34).
