My understanding is that this practice was thought to have both literal and symbolic significance. From a biological standpoint, the oils used (especially fresh oils, as mentioned in the verse) were believed to physically rejuvenate the body and give the individual greater vigor. Symbolically, the application of oils was associated with a desire for honor, happiness, prosperity, divine blessing, and a bright future to be granted to the person to whom the oils were applied (similar to David's reference in Psalm 23:5 to God anointing his head with oil).
