ESV - 1 Then I saw a new heaven and a new earth, for the first heaven and the first earth had passed away, and the sea was no more.

I would say that the sea would no longer exist because it is (both literally and symbolically) indicative of an uncontrolled instability that will no longer be present in the new earth, as well as a medium of separation that would run counter to a unity of existence for the redeemed. Its elimination would also purify the new earth through the absence of unconsumable salt water (as contrasted, for example, to the waters of the River of Life, from which all are invited to come and drink (Revelation 22:17)).
