This is apparently a term for the day prior to Maundy Thursday, and is meant to mark the day when (as noted in the verses cited in the question) Judas Iscariot initially went to the chief priests and offered to act as their agent (that is, as a "spy" for them) in arranging for the betrayal and arrest of Jesus, which took place after sundown the next day (that is, after "Good Friday" had begun).
