Why was the food handled in certain matters during the Passover?

For instance, why was the meat roasted, not boiled? Why was the bread unleavened? What was the significance of the bitter herbs?

Exodus 12:1 - 51

ESV - 1 The Lord said to Moses and Aaron in the land of Egypt. 2 This month shall be for you the beginning of months. It shall be the first month of the year for you.

The lamb roasted by fire makes a sweet aroma and is reminiscent of the offering made by Abraham in Genesis 22 when he took Isaac to offer him to God in obedience to God's command.

Unleavened bread is prepared and ready in a hurry the way the bread was prepared when the two angels came to Lot prior to its destruction in Genesis 19. When salvation is at hand, in the person of Jesus Christ, we are to take it quickly lest the leaven of the world, doubt, pride and contempt, enter us and spoil us to the work of the Holy Spirit in us. 

Finally, the herbs are a reminder of how God destroyed all that was the Egyptians, but he preserved even the smallest green plants of the Hebrews to use in their food. While the herbs may be bitter to the taste alone, they offer an aroma to the nostrils and a savory flavor to the tongue which will indelibly inscribe on their memories as only these senses can the knowledge of God, YHWH, in the present and point to in the future the person, body, work, and suffering of Christ in His death, burial, resurrection, glorification and ascension to purchase their freedom from the bondage of sin and death.

I'm seeing in my study, 
The flesh was to be roasted with fire, picturing Christ enduring God's wrath against our sins. It was to be eaten with unleavened bread, & with bitter herbs. Symbolizing Christ as food of His people. We should live lives of sincerity & trust, without the leaven of malice & wickedness, & with true repentance, always remembering the bitterness of Christ's suffering.
