The Bible does not give an exact answer to when Moses found out he was a Hebrew. But in reading Exodus it is written, Moses his mother nursed him for a time. After that the Bible reveals that Moses knew he was Hebrew.

Now it came to pass in those days, when Moses was grown, that he went out to his brethren and looked at their burdens. And he saw an Egyptian beating a Hebrew, one of his brethren (Exodus 2:11 NKJV)

Jews are the children of the tribe of Judah, Jacob's fourth child. Moses was from the tribe of Levi, Jacob's third son - he was a Levite, not a Jew.
