My thoughts on the difference between prophets and prophecy are that according to Joel chapter 2, when the spirit of God is upon a person they can prophecy, but the actual prophet is different from this. The prophet has a gift that matures into a position over time. Prophets know the heart of God and relay his wants to his people; prophets also stand as gate keepers and guardians for the people of God, e.g. Daniel prayed for the deliverance of God's people. Jeremiah prophesied the captivity and the release of God's people. 

Prophets know the plans of God for his people and use their mantle to speak, declare and pray it into existence. Prophets also warn God's people of oncoming dangers and how to avoid and be victorious over them. So prophecy, even though done by a prophet, as well is something that any believer can do. But the office of the prophets has much responsibility and a burden for the people of God. The Prophet must stay on his face before God for his people.
