In my opinion, Satan was saying that his initial efforts to cause Job to curse God had been unsuccessful because God had only allowed Satan to bring about the loss of Job's sons, daughters, and possessions, but not to harm Job himself. Satan was making the accusation that Job had selfishly endured the sacrifice of others (that is, their "skin") without cursing God because his own "skin" had been preserved. But Satan was claiming that if God now allowed him to afflict Job personally, then Job would turn against God.
