AMP - 2 Then He opened His mouth and taught them, saying: 3 Blessed (happy, to be envied, and spiritually prosperous--with life-joy and satisfaction in God's favor and salvation, regardless of their outward conditions) are the poor in spirit (the humble, who rate themselves insignificant), for theirs is the kingdom of heaven!

Humans have a need for food and water for the survival of their physical bodies and lives. However, that need can never be completely filled or satisfied, since they will always later hunger and thirst again. Jesus was saying that, by contrast, those who "hungered" or "thirsted" to obtain the righteousness of God would have that righteousness granted to them by God in a manner that would be fully and completely satisfying for their spiritual well-being, both temporally and eternally.
