Your question: Has every prophecy in the Old Testament been fulfilled? Is every prophecy in the Old Testament about Jesus?

The apostle wrote that we must rightly divide the word of God. Why? Because some pertained to Israel. Some concerned Christ, and some were for the Gentiles. 

As to Israel, it was written that blindness in part would take place between Israel the nation and Christ until the fullness of the Gentiles have received an opportunity to receive Christ.

Romans 11:25: “For I would not, brethren, that ye should be ignorant of this mystery, lest ye should be wise in your own conceits; that blindness in part is happened to Israel, until the fulness of the Gentiles be come in.”

Again we read concerning Israel, they would go into Egypt and be slaves for around 430 years.

Exodus 12:40: “Now the sojourning of the children of Israel, who dwelt in Egypt, was four hundred and thirty years. And it came to pass at the end of the four hundred and thirty years.”

Genesis 15:13: “And he said unto Abram, 'Know of a surety that thy seed shall be a stranger in a land that is not theirs, and shall serve them; and they shall afflict them four hundred years.'”

These are just two examples of how prophecy was for Israel the nation.

Now, as for Christ, some prophecy was fulfilled with his first coming, and some are yet to come.

When reading scripture you must separate to see if it applies to Israel the nation. Which ones apply to Christ and which ones for the gentiles. 

Not all prophecy in the Old Testament has been fulfilled.

 Fulfilled Prophecies (Messianic)

These are prophecies that Christians believe were fulfilled in the life, death, and resurrection of Jesus Christ.

Born of a virgin: The prophet Isaiah foretold a sign from God: a virgin would conceive and bear a son.

Prophecy: Isaiah 7:14 | Fulfillment: Matthew 1:22-23

Born in Bethlehem: The prophet Micah specified that the Messiah would be born in the small town of Bethlehem.

Prophecy: Micah 5:2 | Fulfillment: Matthew 2:1

Suffering and Death: The "Suffering Servant" passage in Isaiah is seen as a profound depiction of the Messiah's sacrificial death.

Prophecy: Isaiah 53:5 | Fulfillment: 1 Peter 2:24

Crucifixion Details: Psalm 22, often called the "Psalm of the Cross," describes suffering that Christians see as fulfilled in Jesus' crucifixion.

Prophecy: Psalm 22 | Fulfillment: Matthew 27:46; Mark 15:34; John 19:23-24


Unfulfilled Prophecies (Future Events) --

These are prophecies that many Christians believe are yet to be fulfilled in the future.

The Second Coming of Christ: The return of Jesus is a central promise in Christian theology.

Prophecy: Daniel 7:13-14, Revelation 1:7

The Millennial Kingdom: This refers to a prophesied thousand-year reign of Christ on earth.

Prophecy: Revelation 20:4-6

The Final Battle (Gog and Magog): A prophecy of a great end-times battle led by a figure named Gog.

Prophecy: Ezekiel 38-39; also referenced in Revelation 20:7-9

A New Heaven and a New Earth: The final state of creation, where God will dwell with his people.

Prophecy: Revelation 21:1, which echoes Isaiah 65:17 and Isaiah 66:22
