How does an unconverted sinner know about committing blasphemy against the Holy Spirit? Does it mean he/she can't be forgiven?

ESV - 30 Whoever is not with me is against me, and whoever does not gather with me scatters. 31 Therefore I tell you, every sin and blasphemy will be forgiven people, but the blasphemy against the Spirit will not be forgiven.

By my understanding, blasphemy against the Holy Spirit is not a specific identifiable action, such as anything people might say. Instead, it is the final, unrepentant rejection of God's offer of salvation through faith in Christ.

The Pharisees were guilty of this sin by refusing to recognize the witness of the Holy Spirit that Jesus was the Son of God through His words and miraculous actions, and, instead, attributing the miracles that He performed to the power of Satan, and not repenting of that belief.

Similarly, those who do not place their faith in Christ for salvation and eternal life at any time during their earthly life are blaspheming the Holy Spirit by rejecting His testimony as to Jesus being the only path to salvation, as found in the Bible, which the Holy Spirit inspired, and through which He continues to speak.

Mt 12 begins with Jesus' disciples breaking the local law by not observing the Pharisees' idea of the Sabbath. They were plucking and eating heads of grain. Jesus was criticized for it. Then He healed a man with a withered hand on this Sabbath. A man who probably couldn't work and provide for himself and his family was healed and could get on with his life. Jesus was questioned as to the legality of doing this on the Sabbath "so that they might accuse Him." He withdrew from them. Many followed Him and He healed them all. 

Then a demon possessed man was brought to Him, He healed him and was accused of casting out demons by the power and authority of Satan. To which He replied to them that Satan wouldn't cast a demon out because to do so would be to work against himself. "Any kingdom divided against itself is laid waste; and any city or house divided against itself will not stand." (Mt 12:25) He tells them that to enter a strong man's house and take over you must be stronger than the strong man who owns the house. So if He enters Satan's house and cast Satan out, He is evidently stronger than Satan. 

As for the question of how is it that there is an unforgivable sin, and whether a person can commit this sin and be stuck in "the unforgiven zone," it's a little more complicated than that. I don't think you can lose your head and blaspheme the Holy Spirit, and now there's nothing that can be done for you; that's not what Jesus is talking about. The question makes it sound as if an unbeliever can get stuck in that "unforgivable place" before they even know about this "RULE" and are doomed for eternity. NO, that's not what is meant here. 

Jesus explained this to where it's easy to understand. There is only one God. God the Father, Son, and Holy Spirit. The Father sent the Son to die for the sins of the world. The Father sent the Holy Spirit, after the Son was crucified and resurrected back to life, to be a Helper for those who believe in the Son for eternal life (John 14:26). This is how the kingdom of God is set up to operate. The Son died for all the sins of an unbelieving world... All but one sin: Blasphemy against the Holy Spirit. He even says 'blasphemy against the Son of Man (Himself) would be forgiven, but blasphemy against the Holy Spirit would not be forgiven "either in this age or the age to come." ' (He said this to be clear that He means it will NEVER be forgiven, even after He has hung on the cross for the sins of the world). WHY? 

There's only one God. If you blaspheme the Holy Spirit (God) you're blaspheming the Son (God) and the Father. They are one (Jn 10:30). Jesus was blasphemed many times. He died for that sin, and it has been forgiven. He didn't die for the sin of blasphemy against the Spirit. That would be to divide the kingdom against itself. That's what He has been explaining here. A kingdom doesn't work that way. The Son will not sacrifice Himself for anyone who tries to divide the kingdom. "No one who denies the Son has the Father. Whoever confesses the Son has the Father also" (1 John 2:23). 

That's what all of this "Satan wouldn't cast out Satan" talk is all about. Kingdoms don't fight against themselves. At least not the ones that won't to survive. That's number one. Number 2: A kingdom stronger than Satan's is evidently here when you see Satan cast out of his own house. Number 3: The Father didn't lay the sin of blasphemy against the Holy Spirit on the Son. A kingdom divided against itself will not stand.
