The old testament teaches us to give "honor to whom honor is due and praise to whom praise is due." This allows us to pay homage to a great many people, including pastors, but we must also exercise discretion in doing so. Many people do not wish to be recognized publicly because it may prevent them from building up "treasures in Heaven, where moth and rust do not corrupt." As someone who used to minister to shut-ins, my only request was for them to not tell anyone. If they knew of someone needing assistance, have them call our church for assistance and we would oblige. These were sometimes spiritual tasks and sometimes physical tasks, but both add jewels to our heavenly crowns. The pastor you choose to honor may feel this way, so just politely say thank you for your service and honor their wishes.
